Place divided into several rooms, with few tables. The setting of the mis en place and the service certainly belongs to those who aspire to a Michelin star. The tables are beautiful, the context elegant. The restaurant starts from a different soul, from a sumptuous restaurant where cod reigns supreme. We therefore decide to take more courses with the central theme of cod. First comes a very simple and fragrant cod tartare where you can fully feel the quality of the cod. The other starter was a cod salad with an accompanying cream, a good dish but the flavor of the cod was hidden above all by the almond milk. Then we moved on to the first courses, a space risotto, certainly the best dish of the evening, with squid pumpkin and smoked milk. Excellent flavors, very distinct, risotto creamed to perfection. Then we had spaghetti with garlic, chilli oil, oyster emulsion, herring caviar and coffee. Dish without a real soul, we didn't understand the protagonist of the dish. Then for the second course a tarallo crusted cod with lupine green olives as cream and beer as sauce. Definitely an excellent idea but it didn't convince us, the crust was too double and bulky and hid the cod. Finally, an excellent decomposed puff pastry that won me over both for the idea, the presentation and the taste. Innovative cuisine, which pushes a lot but which in my opinion has yet to fully find its balance to give greater prominence to the raw materials.
