A truly unsanitary and unpleasant experience.
We were shocked and dismayed by the chef's unsanitary habits. He continuously licked his fingers throughout preparing the meal - licking his fingers after placing some caviar on top of sushi, eating a piece of a fish with his bare hands in between slicing the fish, and putting some rice into his mouth in between making the sushi, but never washing his hands afterwards, never washing his hands before continuing to prepare the sushi and sashimi. I regret not having walked out. Avoid this place.

We are in Paris for the first time and wanted something other than traditional french food. We found Jin online and were not disappointed. They make food as if it were art. Presentation, service, taste are all superb! The waitstaff were kind and explained the dishes to us which we very much appreciated. The Menu Jin plus some additional upgrades were well worth it. Each piece of fish was prepared with care and had its own unique flavor. It is a small, intimate restaurant with only 12 seats at the counter, but it was one of the best meals of my life. Merci beaucoup! It was un bonne nuit! (Please excuse my very poor french)

Made a reservation months in advance, as I knew I'd be in Paris for my birthday, and on that day, I wanted sushi.As it happened, not only did I get my wish, I got some of the BEST sushi (or seafood!) I've had in my life. Advice: Know sushi, please. Don't go here for your first foray into Japanese dining. It's an insult to the chef to try to move your place setting around, to hold on to dishes instead of eating them as he serves them, or to be loud and raucous in this small, 12 seat omakase restaurant. Omakase is chef's choice, he'll prepare and serve dishes to you as he sees fit, based on the freshest and most delectable ingredients available. It is acceptable and customary to eat pieces of nigiri with the fingers of one hand, though sashimi and non-nigiri are appropriate to eat with chopsticks provided. We arrived on the minute on time, and were immediately greeted and ushered in, jackets taken and purse aligned on a small bench behind our seats at the sushi bar. We were given excellent guidance on beverages, and started with glasses of sparkling sake, which was delicious. We subsequently ordered a cold sake they recommended, which was fruity and fresh and light and crisp, and a true winner. We were right to trust their judgement of best pairing.We opted for the omakase that included the toro and caviar, as we had seen advice to that end. That dish, served first, was incredible. It melted in our mouths, rich and buttery, with perfect complement of the rich oceany intensity of the caviar. The size was worth the price, and we were additionally served a couple other dishes not included with the standard menu later in the meal.A warm seafood soup was also served, which was the. best. japanese. soup. EVER. It was fresh and flavorful and rich without being overpowering, oceany without being fishy, just a warm, comforting, delicious treat.One epic standout was the ika sashimi (squid). I never order ika in other restaurants, I find it always chewy and not particularly worth the money in sushi form. I was surprised to be served it here, but had my opinion served to me to eat along with the ika, because it was the most tender, flavorful, delicious bite of seafood I'd possibly ever had. I don't know how it was treated (kombu?) or marinated, or cut, but I remain in awe of that singular piece of food. The chef KNOWS HIS BUSINESS.Every bite here was bliss. The courses arrived at measured pace, we had ample time to enjoy each, and to eagerly anticipate the next as we watched the chef prepare each morsel. The chef told us each time he provided us with a dish what each piece was, and if we had additional questions, we could direct them to the English-fluent waitresses, who would relay our questions and the Japanese answers for us. The service was insane. It was so perfect, we both remarked later that we never sought for service. Every need was anticipated, and provided for before we knew we needed anything. Truly a Michelin experience. I would not be surprised to see more stars assigned here in the near future. The chef is a true master, every food item was perfect, from the individual grains of rice, to the grand fish served. The service is superb, and the entire experience was second to none.

One of the best meals we've ever had, at Michelin star rated Jin in Paris. 8 seats, 2 chefs, full Omakase. Not to be missed is the tuna belly topped with black caviar. Incroyable!

Bearing in mind that desired gems are rare and come at a price, I highly recommend this restaurant to anyone looking for a night out that blows the ordinary out of the water. I needed a restaurant for my girlfriend's 30th birthday dinner and looked at Yelp and other sites for advice. Asian seemed appealing and then I saw that Jin had recently received a Michelin star but had no Yelp reviews...First we arrive and the welcome is very polite and kind. The cadre is very Japanese and to me seems like a very authentic presentation of what I imagine a top sushi place would be like in Japan. Following along the lines of the decor, in a very Japanese fashion, the quiet hostess took our coats and politely asked us what we would like to drink to start. We ordered sparkling saki and were ushered to our seats at a beautiful solid wood bar surrounding two expert sushi artists busy at work. There are only 12 seats in the bar so it is almost more of a "spectacle" than a simple meal. The individual courses then began to come out one by one and we were amazed by the finesse and detail of each one. I especially loved the monkfish liver and a crunchy seaweed hand roll. We had finished our sparkling saki (fun to try but not amazing) and ordered a bottle of saki as recommended by our server. This was the most amazing rice wine I have ever tasted. It was floral and fruity and far better than many reputable white "grape" wines I have sampled in France and elsewhere. I highly recommend taking their advice for saki - it has nothing to do with what one might chase a bottle of Kiren with at your neighborhood sushi joint.Then the sushi started to arrive before us piece by piece: each one carefully crafted and beautifully presented. It was heavenly. I learned also that ginger is not to be eaten with the sushi but rather between pieces to cleanse your mouth and renew your taste buds for the next one. The two chefs remained very quiet and did not interact more than to present us with our next sushi delight. If we asked questions, whispered responses where given in Japanese to our server who then translated.After enjoying a remarkable evening, we embarked for the door and were met by the very warm and courteous head chef who had left his post to bid us farewell. He invited us to return and as we walked away, he remained on the front stoop of the restaurant waving goodbye and smiling until we turned the corner two blocks down the street. I'd give 6 stars if I could. The 135โฌ menu and then drinks on top means this is not a restaurant for every month or even every year. But I am thrilled to have shared the experience with someone I care for deeply and want to go back as soon as I can save up enough to do so. ;) Thank you Jin!
