On the day of our original reservation, the flight was uncooperative to say the least and I had to call them to reschedule, we had limited time in paris and Le Chateaubriand is always fully booked weeks out, it wasn't looking good for us. But they were so accommodating and found us a tight slot the next day. That'd bump up a star on any rating, not that they needed the bump as they were a five star experience anyway.The day of our rescheduled dinner, we got there a bit early and saw chef Inaki Aizpitarte outside on the phone having a smoke. I was quite surprised to see a chef of such renown doing the humble routine any number of commis were doing at the same moment. Le Chateaubriand is the one of the first neo-bistrot that challenged the stuffy formal white-cloth french fine dining with wild improvisational cooking that paved the way for the today's french cuisine, its importance cannot be understated. The wild day-of market-driven cooking meant it's gonna be surprises, not just what they serve that day, but new dishes entirely. Some odd creations at our dinner were sardine spring roll, octopus stuffed tomato, quince tortellini, chocolate foie gras sauce, dessert with runny egg yolk (this I know to be a constant here), etc. And more importantly, their improvisations work! I loved everything here bar the quince tortellini which I still found intriguing. I'll definitely be back whenever I have an opportunity to.
