Rushed loud unfriendly
Disappointing. Food quality was good but atmosphere was more like a club. Music too loud. Felt like we were rushed to eat up and pay the check and get out. Not a place for a couple. Full of large groups. Zero atmosphere. Expensive. Very disappointing. Been to this restaurant before on many occasions but will not be returning.

The cooked and composed dishes were ok. I would stick with those if I ever returned. The sushi was very poor. We had 10 different pieces of nigiri. At best it lacked flavor. The uni was disgusting. The rice was over cooked and cold. The restaurant is large and crowded, lacking any sort of intimacy. The meal cost close to $600 for 2. I would have preferred sushi from a grocery store. We have been to Matsuhisa at other locations a few times and we have never had a poor experience. We talked to the manager about our poor experience with the sushi and he implied it was our fault for not talking to him prior to finishing the sushi. I guess I foolishly thought that with each successive different piece of fish, the quality might improve, however it is the opposite of that which proved to be true. Needless to say, we will not be returning.

Make sure you book a long time in advance or know someone with connections for a reservation. It is well worth the effort. This is as good a Japanese meal that you will eat. Not cheap but delicious

We had a fabulous dinner. The service was spot on and the food was absolutely delicious. We had so many options and tried a variety of dishes. Pleasant atmosphere that was enhanced by the warm service. We will definitely be back.

Just letting you know that my husband and I love Matsuhisa, but this time was not the case. We were celebrating our 40th anniversary and we love the chef’s experience, but we didn’t realize that Antonio thought we were going to share one versus two.We visit the one in Cherry Creek and never had this happen. First thing, my husband ordered a glass of sake which I believe he was forgotten about since I had to ask one of the servers about it half way through our service. Antonio placed our order and didn’t check back with us until he gave us our check. Everyone in between was great except for the one that gave us our dessert. He didn’t even tell us what it was. We believe it was a coconut cake and chocolate ice cream. What gave us the biggest clue that it was only one order was when he served us a lamb chop that wasn’t cut and we didn’t have utensils to cut it, so my husband and I had to bite it and sharing a miso soup was definitely weird. We were told that we had to visit the Aspen Matsuhisa, but this was not enjoyable experience.

We had an amazing dinner and opted for the Omakase chef menu. It is well worth the price and the best dinner we had in aspen. It's 8 courses and paced well. All items we probably wouldn't have chosen ourselves, but we were very glad we left it in the Chef's hands. The sommelier also helped us pick a nice pairing wine and didn't push upsell unnecessarily. Overall a great experience!

We love Japanese food and when in Aspen, this is the ONLY place to go. Mike P took control as our server right out of the gate. Great cocktails then strong recommendations throughout the entire meal. We turned it into a tasting menu night selecting many of Mike's spot-on favorites.

This is an excellent restaurant and a favorite in Aspen. We went to celebrate a birthday that fell during our vacation, knowing from past experience it would be an ideal spot.

Spectacular food, service and ambience! Had omikase (tasting menu) with close friends. All 3 couples agreed it was a fabulous meal! Our server, Allie went above and beyond to provide a top experience. Both the owner and chef came to our table. Could not have asked for a better meal and evening!

We had some fantastic items - lettuce hand rolls and salads, but a few items that I found inadequate - miso soup and oily Tempura. The waitress said that the maki rolls were not a specialty and she was right - they were fine but ... The waitress said that sashimi was the specialty, but that is not clear on the menu. I suggest eliminating menu items that are not specialties in a restaurant expected to serve the exceptional. We came for something extraordinary and left disappointed in that regard.

Great food. Awful ambiance. I’ve been wanting to go to this restaurant for a long time. Finally got reservations. When we arrived, we were placed in the basement, which was a very loud pub like atmosphere. We are also told that we needed to free up the table by 745 for the next group. I’ve never had that happen before. The food was great, but was very rushed. Our dishes were constantly taken away. The second we took our last bite. I have to say it was quite disappointed. I was looking forward to an elegant sushi, dinner, in a quiet restaurant. This is now a tourist trap. There is no attention to making the experience, a quality dining event.

What a disappointment.. we loved Matsuhisa Vail several years ago, & many Nobu locations, so we were really excited to try this one for our trusted favorites, but wow.. completely rude staff and honestly terrible food.. we don’t mind paying for quality, but this was just an overall poor experience, will not be returning & do not recommend you waste your time or money here..

Poor service, rude and unfriendly staff, including host, the bartender and most servers. I know sushi very well. Food was well presented BUT absolutely average for an average sushi restaurant. That is even worse when pay over $600 for a table of 6 and get nothing but a poor experience and bad treatment from the staff. Just because you’re a “popular restaurant” does not give you the right to treat your customers this way. Certainly would not recommend this place.

We tried to walk in on a Friday night which we knew would be near impossible, but we were able to grab a seat at the bar. Brittney was bartending that night and the place was packed. She made sure we had drinks and knew how to keep the food coming at a good pace despite being so busy with drinks for the whole restaurant. The food is what you would expect, upscale amazing sushi. The king crab tempura is ridiculous!! The rolls and sashimi/sushi were top notch. Brittany was very cool and made the dining experience for us. If you have never been you need to go, if you have been then you know and should return. For those that haven’t been it’s expensive, but with every bite!

We spent four nights in Aspen recently and this was our best meal! From the cocktails to start, followed by the mushroom salad, the spicy garlic shrimp, the king crab tempura, the lobster roll and finally the shaved ice for dessert, everything was five stars. The service and ambiance were also great. We were there on a Monday night and the place was busy with a fun vibe. If you like Asian fusion/Japanese food, definitely eat here.

My business partner and I had an absolutely perfect experience in this restaurant. While the spot is expensive, it was worth every single penny. Hostesses and staff were incredible in facilitating a reservation and the food was out of this world. Definitely order the king crab tempura and ask the staff what some of their favorites are! You wont be disappointed. The place was also really clean for being in an old victorian. Excellent service.

Recently visited Aspen from Florida. Having been to many Nobus, we had to try Matsuhisa Aspen and it did not disappoint. Food was fresh, service was excellent and great vibes all around. We also celebrated a birthday and the staff made it a very special birthday dinner. This place is well managed, especially during this Covid time. We will be back!

Great dinner at Matsuhisa Aspen. The staff was very helpful. We seemed to have 3 or 4 people helping out with our table which meant great service. The food was amazing! We were skeptical to have sushi in a mountain town but everything was super fresh. It wasn’t just a dinner, it was an experience.

Downstairs is tired and needs a major facelift. Windowless, not-describe room with little style or visual interest. Floors not vacuumed regularly--crumbs and food visible below many tables. Music is club-like (loud, pulsing), even as early as 6:30pm.
Prices are stupidly high--example from just this week: Alaskan King Crab leg--$35--the order is exactly one crab leg. One "hot" yellowtail dish (as described by surly waiter) was delivered to us at room temp....did it sit for 10 minutes, or was it not a "hot" dish at all.
Lastly, the waiter seemed more than a little annoyed that we were not ordering drinks. We had just come from having cocktails elsewhere and wanted to have some food in us before drinking more. He came back two more times asking if we were "ready" for drinks before any food had hit the table.
This restaurant is riding on the fumes and reputation from another era. Still "a scene" and if thats what you want in a restaurant, you will enjoy it. If you care about the room itself, a fair price for food, and a waitstaff not hellbent on selling you high-margin drinks, then there are a LOT of other places in Aspen to try (Betula, Casa Tua, Stakhouse 316, just to name a few).
Hurt by Covid, not the same
We were super sad to go to Matsu in Aspen and encounter diminished food quality. For the first time ever, we all wanted to leave after the 2nd dish. The long-time staff were not there, and shocked to be able to get a last minute reservation over July 4 weekend. The wait staff was clearly inexperienced, which is understandable, but we wouldn't return with the price/performance of the food.

On a recent trip to Aspen, I made sure to make a dinner reservation at Matsuhisa after reading many positive things about the restaurant. However, after having dinner there, I’m confused, still trying to figure out what the hype is about. Although the service was very good, my wife and I both found the food to be pretty mediocre and the restaurant itself to be dated.
We visited when indoor dining was still open in Aspen in mid-January, and I made sure to call the restaurant exactly a month in advance when reservations opened so that we could get the date and time we wanted. It’s annoying that Matsuhisa wasn’t taking reservations online at the time, but we were able to get a table for close to the time we wanted by calling, so it worked out.
When I made the reservation, they didn’t specify which part of the restaurant we’d be in, upstairs or downstairs, but I was correct in assuming we’d be in the main dining room, which is downstairs. I was surprised that by “downstairs” they mean an underground basement dining room, which I found to be a bit dark and depressing. I thought upstairs versus downstairs was referring to ground level versus second floor, when in fact, “upstairs” is actually the ground level. The entrance to the restaurant is also odd, since you enter through a non-descript door off of a side street, rather than entering from the front of the building as would seem normal.
Once we had checked in with two separate hostess stands, one at street level and one in the downstairs dining room, which seemed poorly coordinated (the second one had no idea we were coming down, so it’s not like the two seem to have any communication), I was surprised to find that the restaurant is very dated on the inside. This was our first time at any of Nobu’s restaurants, and I figured any restaurant by the celebrity chef would be really sleek and modern. However, this one looks like it’s straight out of the 90s, with everything done in blue and peach with really light wood, and not in particularly great condition either. This restaurant looks shabby and has clearly been screaming out for a renovation for years.
Even though the restaurant was at 25% capacity when we were there, it definitely still had a loud, bustling feel to it. Noise carries easily between tables and from the open kitchen that the tables overlook. Our server came over quickly once we were seated, and he was very nice, going over the specials and his recommendations from the menu since we had never been there. The service we received from him, as well as from the very nice assistant server, was strong throughout the meal. One of the two servers was always readily available and they stopped by at appropriate intervals during the meal.
The food, however, was not as good as the service. It was really a mixed bag, with some dishes being very good, and others totally missing the mark. From the cold dishes, we started with the big eye tuna sashimi with jalapeno (a special instead of the usual yellowtail with jalapeno on the menu), and the Nobu crispy rice with tuna. The sashimi was excellent, as the sauce and jalapeno really worked perfectly with the fish. However, I thought the crispy rice with tuna was a huge disappointment. I didn’t know it was going to be a deconstructed appetizer where we’d have to put together each of the pieces ourselves, which doesn’t appeal to me. Even beyond that, I really don’t like tuna crispy rice unless there are actual full pieces of tuna on the rice. The paste that they used here didn’t even contain any noticeable chunks of tuna, so it was basically just a tuna-flavored paste. I thought this was a poor-quality choice for this dish and would not get it again.
From the hot dishes, we tried the tempura rock shrimp with a creamy sauce, and this was very tasty. Even though the pieces of shrimp were a bit on the small side, it was still tasty, and the creamy sauce was good.
We then had a few pieces of sushi and a couple basic sushi rolls (spicy tuna, shrimp tempura), and these were just ok. I didn’t think the fish for the pieces of sushi was particularly great, more just unremarkable, and the sushi rolls were not the best. The spicy tuna roll contained the same ground tuna paste as the crispy rice, which we didn’t like at all, and the shrimp tempura roll was ok, but poorly rolled and pretty bland.
We finished the meal by sharing the Nobu shaved ice, which was huge even for two people to split, but it was actually very good with a variety of flavored syrups to add, along with sweetened condensed milk to pour over it as well. We liked this dessert.
We didn’t order much to drink, but I did have the gardener cocktail and thought it was mediocre. It was kind of like a cross between a green juice and a margarita, but was too sweet and not particularly great. It did not taste like a particularly high-end cocktail, and the fact that I hadn’t even finished one drink by the time we had dessert was a good indication that I didn’t like it.
Overall, our meal at Matsuhisa was very disappointing. Although some items were good (the sashimi jalapeno, rock shrimp tempura, and shaved ice dessert), other items were so disappointing or mediocre that the whole meal fell flat. In addition, the restaurant itself was really dated and unimpressive. Even though we had great service to help balance out some of the negative aspects of the experience, I still wouldn’t want to come back.

We called for dinner reservations after our hotel failed to get them and Iowa got us right in. We sat at the bar and Sam made some great recommendations. We had several rolls, sea bass, and crab. Everything was prepared and presented beautifully. We’re so glad we had the opportunity to eat here and enjoy this experience.
