Pros -We order a bottle of red wine. They carry a well thought selection of Mexican wines, with good value-price ratio. -We arrived early to our reservation, took a drink, and were provided a table right on-time. We visited on a Mon night and it was packed, would not suggest arriving wo reservation. -For us the highlights of the menu were; cooked sweet onion (spectacular!), and for main the Tagliatte and Flat Iron Wood Grilled Wagyu, nevertheless they change the menu often. -Clean bathrooms ! Cons -The place was noisy, mostly due to roof structure, add ambient music, and it was challenging at times to understand the waiter or even have a conversation. -Service was attentive and timely, but the place has fine-dining prices (tasting menu is $150 and $235usd) so we were expecting a bit more from the setting and overall experience. -At times the food tasted a bit oversalty, for example Tagliatte and Pantomate with Parmesan cheese. The Grilled Wagyu was on-spot with balanced flavor. -Carrasco Iberian ham underdeliver in terms of presentation and flavor. Our conclusion is that Maximo has built a well deserved name for itself, but based on that day tables around us, it felt more as if it caters to a tourist market segment. I recommend the place, but being more of a local, would not really be my first option in the upcoming future.
