I went to Republique years back when it first opened and didn't really get the hype back then. My previous review is on trip advisor.
We tried again with what looked like a great special Thursday night tasting menu.
It's unfortunate that so much of the meal, which was 5 star, was spoiled by some really bad service choices.
1. The first course was advertised as crab and at the restaurant they served eel. When I asked the server about the change of the menu she was not aware. And they are allowed to substitute but the customer's not.... not a great amenity for a $140 menu. ( FYI, I'm not a big eel fan)
2. Up until the last meat course, all was totally fantastic. Amazing scallop dish, sunchoke soup, pasta, dover sole with champagne, just delicious. The meal was hitting a home run.
3. However, when you advertise liberty duck as the last course before dessert, it's probably wise to serve more than an ounce of it, even if it's a tasting menu. This was just another bad choice and the duck was not well represented....it was a sad looking plate. It really brought the whole meal down.
4. I also need to comment on the wine tasting which was very well paired but I think $95 was a bit steep for the rigorous 2 oz. pour selections..... Not to be totally picky, but I usually get a least one "topping" pour on one of the tasting when spending this amount.... it's a nice service "extra".
When you're spending $250 a person for this type of meal, I think all the choices have to be well thought out. I think it's a shame that bascically such a good meal could suffer from a few choices which are so easily correctable:
1. if you're going to change a component of a one night advertised menu, admit it when you greet the guests and offer something to substitute.
2. when you're featuring Liberty Duck on the menu, and as the last entree course, serve more than an ounce of it
3. give an extra splash of wine with one of the tastings, it's a small effort that goes a long way and makes the customer feel just a tad more appreciated.
