There is a pervasive taste in most of their dishes that if you have a refined palate you will not enjoy. I couldn't identify it but by the third course I was having a hard time committing to my next bite.The first real course with the oyster, tempura, and small bites was a tough start. But then the fresh fish plate was very delicious. Basic but clean. The soy sauce is similarly clean. But what followed was miss after miss with a couple hits along the way (scallop nigiri comes to mind). I asked some questions of our two very nice servers but didn't get far. So here's my theory. More people are ordering the petite omakase and so their expensive product isn't moving as fast. To cover up the fishiness that comes as fish ages they did things like torch the fish. The chef who is making this isn't washing his hands thoroughly after so that torch flavor is getting on everything on that plate. And because he's heating fatty fish the oils stick and that taste is pervasive. The other misses I think are attributed to things being overcooked and flavors being poorly thought out. If Michelin stars are to mean something there are a few things I would expect. Store bought ginger and wasabi aren't two of them. Neither is feeling sick and I'm writing this as I lie in bed at 6am with stomach cramps.I stopped writing bad reviews because I know they can be hurtful to restaurant owners and staff but I'm confident nothing I write will hurt the success of the business but maybe this can help a couple fellow foodies. So to the restaurant I'm really sorry for these words. Hopefully my theory is correct and yall can make this productive rather than painful. If that happens please feel free to contact me and I will take this review down.
