I've come here a few times on and off since they first opened and recently I've been less impressed with the flavors. My best description is it's a decent impersonation of authentic Sichuan food: it's got good texture and appearance and is almost there but it's just missing some punch across the board. My favorite thing here used to be the rattan pepper fish. When I ordered it this time it was pretty bland. It had all the right ingredients, the fish had a nice texture, and the portion was generous, but it just tasted...plain. It was short on ginger, garlic, salt, peppers, basically everything that makes this dish tick. I was straight up drinking the broth and eating the peppers and ginger pieces to try to squeeze more flavor out of the dish and that still wasn't enough. It seemed like they skipped a really basic step (frying the peppers in oil to release the numbing spice) because the spice profile just wasn't there. The lamb soup was also a disappointment. For 43 dollars I was expecting at least what was shown on the menu: bone broth with bone in goat meat falling off the bone and leaking marrow like I've had in my hometown. The meat was just slices of rubbery supermarket lamb, and because there is no bone in meat in this thing I can't rule out the possibility of this being made with hot pot mix. For the asking price this dish is straight up bad and not professionally presented. It's possible they've tuned back their flavors to satisfy a more Americanized audience. If that's your kind of thing then this is a manageable introduction to sichuan food, but they hold so much back in terms of kick and flavor it just does not feel like a satisfying experience to me.
