We reserved a table AND a duck for the 3 of us , a week in advance, for our traditional New Year's Eve family Peking Duck dinner (early since we'll be in Tennessee all next week). We were inspired to try after stumbling upon the chef's duck preparation on YouTube. It was bitter cold this particular evening (15 degrees) & the room was periodically filled with cold blasts. The waitstaff were smiling & attentive throughout the evening. The hostess asked if we'd like to move further in if a table cleared. Very thoughtful but we declined. So...we'd preordered the duck (strongly recommended if that's why you're going) along with the string beans with Brussels fried garlic & ginger and the vegetable spring rolls. The vegetable dish arrived first. Nicely browned. Perfectly cooked, a bit of crunch & delicious. The spring rolls followed and were golden brown, crispy & flavorful but we didn't find the accompanying sauce very complimentary. The spring rolls stood up quite well alone though. A few moments later the duck was presented with thin fresh pancakes the typical thinly sliced cucumbers & scallions and 3 sauces (hoisin, peanut & sesame and cranberry). Ultimately we ALL favored the traditional hoisin as it just pairs better than anything else. The duck flesh was juicy & succulent. The skin nice & crispy. The chefs also centered the plate with many pulled chunks of delicious dark meat under the crispy skin cover. We ordered a key lime pie with lemon sorbet to share for dessert which was simply outstanding and a nice finish to a very good meal. We've had Peking duck throughout Hong Kong, Beijing and NYC Chinatown. Red Farm was a fine example. However, the $115 price tag is a tough pill to swallow. We normally have our New Year's Eve Peking duck at Ping's Seafood in Chinatown. Ping's whole duck is executed exceptionally as well...but comes in at $78. I'd encourage a visit to Red Farm, but I'll likely go to Ping's to satisfy our annual duck tradition.
