In my opinion, this was a five star evening.
The ambience was great. Sitting outside on the back patio was lovely. Our servers Cat and Marco were excellent. My water glass was never empty. We had helped from Cat making choices on items to eat and how to spread out the meal. One tapas plate was better than the next. Hard to choose which was better. They were all amazing. There was only one glass of wine which was a Tempranillo and it was good. Now for the food, we started with five cheeses, manchego, Cabrales, Cabra, Al Romero, and Cana de Cabra. We then had the bikini sandwich, and Albondigas de Wagu which were unbelievable. Then for my favorite bone marrow. It was outstanding. We had the frisé put on the side not on top. And the brussels sprouts with the sherry. Gastreich and chorizo was excellent. It was my birthday, and they gave us a delicious butter cake, and we ordered churros with chocolate, which was great. I would recommend this to anybody!!

I only go here once in a while because the menu items are a bit expensive, but when I do go, boy do I like to splurge. I enjoy how some of the menu items change seasonally, but some still remain the same due to their popularity (and rightfully so). I love to get 4-5 small plates to try and sometimes I get their seafood paella depending on who I'm with. I honestly forgot the actual names of each of the items, but I ordered a Vaca tonic, egg and uni toast, wagyu meatballs, steak and tuna tartare, albacore tataki, pork belly, and tres leches. I loved the meatballs and tartare the most. The tonic was quite strong this time around, so I'd say the way they make their drinks is inconsistent. The albacore and pork belly were a bit disappointing, as the albacore's sauce was too overwhelming and the pork belly was tough. I liked their uni and egg toast, but they skimped out on the uni this time around :/ Their tres leches was good; nothing that wowed me, but you can't go wrong with it. The waiters are always so hospitable and friendly!! I have no complaints with their service. They also seat me right away, even when I arrive earlier than my reservation times. I'm always a sucker for interior design so I really liked the layout of the restaurant. I do think it is a bit snug, as there's nowhere to really stand if you do need to wait for a table, but it only gets like that during weekend dinners. I definitely say it's worth going at least once (but don't be surprised when the bill comes out high). For the most part, their quality matches the price and I'd go back again.

Nice tapas and good paella, great for pre-theater dinner! Located by the arts complex the restaurant offers valet and plenty of self-parking in the structure across the street (with validation). Some tapas are definitely smaller than expected like the Jamon but the paella (we had the paella de pescado) was a good portion for two. There is both an inside (more moody) and a front and back patio (with heaters).
Tapas are delicious but the paella needs work.
Ambiance here is amazing and the service is excellent. I've come here a handful of times and have learned that in order to get the best experience, stick to the tapas. It's just a bit disappointing that a Spanish restaurant's paella needs work.

We shared some apps and had a paella. Only downside is there isn't much on the menu that is on the lighter side. Lots of meats and heavy dishes. That being said, everything we had tasted great.
Vaca is a breath of fresh air around Orange County.
They create beautiful, unique sharable dishes. Come and order a bunch and let everyone have a bite of each. Most of their plates are tapas style, so only a few bites, but they are wonderful. There are a few larger dish options but I feel like Vaca is at its best when you bring a group and have fun with all their smaller sharing plates.
The seafood paella here is out of this world good.
This place is hipster trendy but nice and cozy. Service can get a bit busy but what understandable since this place gets packed. Had my birthday meal here and I absolutely loved everything about it. Highly recommended!
This was my favorite restaurant until tonight.
Sadly, it seems the quality of the food and service has gone downhill. We ordered the oyster mushroom appetizer - it was overcooked and tough. Too bad. I brought it up to the waiter and he said that it was supposed to be like that. Then I ordered the skirt steak which I have usually really liked to the point that I've even ordered an extra one in the past. Tonight it lacked seasoning and was a bit chewy. My husband ordered the cordero (lamb), and that was overcooked and dry. One piece was like shoe leather tough. Again, the waiter said it was supposed to be cooked like that. My husband sent it back and ordered the strip steak but that also lacked seasoning like my skirt steak. For dessert I ordered the churros and chocolate. The churros were so overcooked they were literally hard and dry. I tapped them on the dish and then tried to break one in half but it wouldn't give. I called the waiter over, demonstrated, and he said they were supposed to be crunchy. Yeah, I said, that's true but they're not supposed to be rock hard. These were obviously overcooked. I told him to take them back and he said he would exchange them and then he made us wait about 20 minutes for a new batch. The new batch was fine but overly frosted with sugar (which I shook off) and there was no apology for the time delay. Our party of four waited for me to get my dessert after everyone was done. This was a very disappointing experience. I will not go back. So sad to see my once favorite restaurant become so mediocre. The chef de cuisine was drinking wine with some of his friends who were at the table next to us. Maybe he should've been paying more attention to detail in the kitchen. And for $300 I'd like to leave satisfied and happy, not disappointed. As I mentioned, this was our favorite restaurant and now I just feel like it's not worth going back at all.
$350.00, only to get food poising!
My son, daughter-in-law, and I dined at Vaca on October the 9th. We all shared an order Raba De Toro (oxtail), Canellone de Pollo Ahumado, the bikini sandwiches, a three cheese plate and then an order of the Seafood Pealla (de Mariscos). Everything tasted fine. The service was only OK, as the waiter never didn’t remember to order one of the other dishes that we ordered. With the tip, the bill was close to $350.00. Unfortunately, all three of us became quite ill starting around 2:00 in the morning. This continued well into the next morning. The next day I called the restaurant and spoke with their manager Brandon. He asked that i give him 24 to 48 hours to investigate what might have happened. Several days later he called and left a message on my voicemail. I returned that phone call and was simply told we looked at everything and we can't find anything that could have caused you to become ill, “We're very sorry”. I asked him if he thought that it was extremely odd that all three of us who shared all of the same dishes would become so ill from eating there. He said well we followed all of our protocols and there's nothing else I can do for you except to apologize. I truly expected that a restaurant of this caliber would offer more than a simple, wrote apology. I explained that it would be very difficult for us in good conscience to return to their restaurant, and he glibly said “do what you want to do”. Enough said, I can tell you that we won't return.
Nice dinner spot for couples
Had dinner here last night with my hubby. He said this is owned by a Top Chef and serves spanish cuisine which i have been craving for. We were promptly seated in the patio at the back even if we didn’t have reservations. Below are the food we ordered: Drink Sangria Rosa - 4/5 Pulpo - 4/5 flavorful but a little dry. They should’ve added more olive oil. Gambas- 5/5 very good with the right spice Vieras a la plancha (scallops) - 5/5 scallops was cooked well and taste was like thai curry Seafood Paella - 3/5 it was okey. I’ve tasted better. The Paella at Telerefic in Palo Alto is the best Ive tried here in California. The seafood was well cooked though. Churros con chocolate 3/3- i was looking forward to this. But the churros was overcooked so it was so hard and it was thickly coated in sugar which we had to scrape off. Spanish churros don’t have sugar coating. At least the chocolate tasted like the spanish chocolate that is not too sweet. Our server miguel was very amiable and checked on us regularly. The ambience was also nice. Parking is in the lot across Vaca and can be validated at the restaurant or you can do valet for $10.
Very Good but not Outstanding Tapas
My brother in law and I went to try this place, which is notorious for being booked, even mid week. We walked in at 6:30 and luckily found a table for two in the outside area in front of the restaurant. This was the perfect place since we were not blasted by the noise inside. We came to try the tapas. I suspect that the meat is excellent at this place, but we wanted variety, and I craved tapas with a good glass of wine. We had several tapas, each of them large or small enough to share, the carne crudo, gambas a la plancha, pulpo al la Gallego, patatas bravas, and a mixed cheese and jamon platter. The best was the carne crudo, a small stack of raw meat with egg salad on top. Next was the gambas, shrimp in a sauce that probably had vinegar in it, not the typical butter and herb sauce. The other tapas were not as exciting, especially the Fermin jamon, which was dry (I should have ordered a smaller portion and gone for the Cinco Jotas). The toasted bread that comes with each plate has a funny taste, which I could not identify. Vaca buys into the common misinterpretation of tapas outside of Spain. In Spanish bars, the tapas (or pintxos in Basque country) are right in front of you in a vitrine, and they are small and super affordable. They are also served within a minute, once you alert the person behind the bar. The entire setting encourages spontaneity and promotes socializing. Outside Spain, tapas are glorified mini dishes that are served with fanfare and cost a fortune, especially at Vaca. The wine list, when it comes to glasses and not entire bottles, is utterly unimpressive. We had a tempranillo, presumably from Rioja, a crianza and a reserva, but there was no further information in the wine list. Decent, but not outstanding wine. All in all, a nice experience, but this is a far cry from a Michelin star (even a one star) restaurant. Nothing here was super exciting, and so, the search for a decent tapas place in O.C. goes on.

Wow! I mean, wow. How disappointing can a restaurant be? Forget the location and expectations for an amazing dining experience. I've cooked better steaks from Stater Bros and Vons hundreds of times since 2012 when we moved to 3400 Avenue of the Arts until today. Wow. Don't bother. Stay home and cook your own food.
